Middle Eastern Spiced Beef with Roasted Sweet Potatoes

Materials
- 4 Sweet Potatoes
- 2 Tbsp Extra-Virgin live oil or Avocado Oil
- Kosher salt & Pepper
- 1 Medium Yellow onion
- 2-3 Cloves Garlic, minced Preference
- 1.5 lbs Ground beef (pref. grass-fed, 80% lean)
- 1 Tb Seven Spice Seasoning
- 1/2 Cup Beef broth
- 1/4 Cup Toasted Pine nuts Optional
- 1 Bunch Parsley
- 1/2 Cup Sliced Red Onion
- 1 tsp Sumac
- 1 fresh Lemon
- 1 Cup Tahini
- 1 Cup Ice cold water
- 1/2-1 fresh Lemon Preference
Instructions
- 1. Preheat oven to 425F, Line a sheet pan with parchment paper.
- 2. Rub the flesh of each sweet potato with olive oil or avocado oil and season with salt and pepper and don't forget to poke holes. Bake until tender, approx 60 min
- 3. To make spiced beef, heat 2 tablespoon of oil over medium heat. Add the onion and season with salt. Cook, frequently stirring, until the onions are translucent and softened, 5-7 minutes. Add the minced garlic and sauté for another 2-3 minutes until fragrant. Add beef, seven s bits from the bottom of the skilled. Cook until most of the liquid has evaporated. Remove from heat and let sit.
- 5. Mix one bunch of parsley with 1/2 cup of sliced red onion, add sumac and lemon juice. Salt to taste.
- 6. There are many ways to make Tahini Sauce! For the sake of time, I did not use an food processor and still achieved the desired texture. Put 1 cup of tahini in a bowl, add salt and one fresh squeezed lemon. Stir to mix together. Slowly add ice cold water to desired consistency and vigoursly stir to combine. I personally like my mixture to resemble a salad dressing.
- To plate, slit sweet potatoes in half, scoop spiced beef into middle of the potatoes, add parsley/onion mixture and top with a drizzle of tahini.Enjoy!
- Tip: Top with toasted pine nuts for extra crunch! If you like a sweet and savory bite add 1/4 cup of golden raisins or currants to spiced beef once you move the meat off the heat to sit.
