2 English cucumbers, diced

2 cups of cherry tomatoes, halved

2 (16-ounce) cans of chickpeas, drained & rinsed

1/2 cup kalamata olives, chopped

1/2 cup shredded carrots

1/2 cup red onion, diced (amount to taste)

1/4 (or more) cup golden raisins

1/4-1/2 cup of fresh, chopped cilantro
Dressing:

1/3 cup of good extra-virgin olive oil
-
1/4 cup red wine vinegar
-
1-2 garlic cloves, minced
-
1 teaspoon of sumac
-
1/4-1/2 tsp. of red pepper flakes, leave out if you don’t want heat
Directions:

Make salad: Place all ingredients in a bowl. Season with salt and pepper.

For vinaigrette: olive oil, vinegar, garlic, sumac and red pepper flakes in container with tight lid and shake.

Drizzle vinaigrette over salad when ready to serve.
