Mediterranean Chickpea Salad

You hear the word Mediterranean and you just know it’s going to be delicious AND healthy! This vegan protein packed dish is perfect anytime of year. It is the ideal lunch, side dish to accompany a meal or bring along to a potluck/BBQ. Ingredients:
  • 2 English cucumbers, diced

  • 2 cups of cherry tomatoes, halved

  • 2 (16-ounce) cans of chickpeas, drained & rinsed

  • 1/2 cup kalamata olives, chopped

  • 1/2 cup shredded carrots

  • 1/2 cup red onion, diced (amount to taste)

  • 1/4 (or more) cup golden raisins

  • 1/4-1/2 cup of fresh, chopped cilantro

Dressing:

  • 1/3 cup of good extra-virgin olive oil

  • 1/4 cup red wine vinegar

  • 1-2 garlic cloves, minced

  • 1 teaspoon of sumac

  • 1/4-1/2 tsp. of red pepper flakes, leave out if you don’t want heat

Directions:

  • Make salad: Place all ingredients in a bowl. Season with salt and pepper.

  • For vinaigrette: olive oil, vinegar, garlic, sumac and red pepper flakes in container with tight lid and shake.

  • Drizzle vinaigrette over salad when ready to serve.
