My boys’ favorite food I make are homemade meatballs. They can’t get enough and I love that they won’t eat any other kind of pre-packaged meatball. Fresh, homemade food from mom says LOVE! My boys also love to help me make them. I really don’t bake that often, so this gives me an opportunity to share my love of cooking with them. Teaching life skills, bonding and delicious food…makes this mama’s heart happy!
Ingredients:

1 cup of panko bread crumbs

1 lb of ground grass fed beef

1 lb of ground pork
-
2-3 garlic cloves, minced
-
2 eggs, beaten
-
1 cup of grated parmesan, plus more for serving if you want

1/3 cup of whole milk
-
1/4 teaspoon of salt
-
1/4 cup of fresh flat leaf parsley, minced (approx. a handful)

Olive Oil
-
Pasta Sauce, our family loves anything from Mezzetta!
Directions:

Place meat into a large mixing bowl

Add garlic, pinko crumbs, eggs, parsley grated Parmesan, milk, salt and pepper.

Mix with hands, I like to throw on some latex gloves

Once combined, take small amounts of mixture and roll with hands to make meatballs-you will have approx. 24 (My suggestion is to freeze 1/2 – 2/3 of the meatballs)

Before you cook your meatballs, place them in the freezer to firm them up for about 10 minutes.

Coat and heat heavy pan with olive oil,

Brown meatballs on all sides, do not cook them all the way through

Once browned, add your favorite sauce, cover and simmer for 30 minutes.

Serve over your favorite pasta or make a meatball sub sandwich, Enjoy!
